Simple. Look at Blade mCP X - EFlightWiki and scroll down to Pitch Setting Limits section.

I'm struggling for it to take off. When I throttle the blades spin but it doesn't lift up

Sounds like too much negative pitch. Mine was like that out of the box, wouldnt lift off even at full stick. Have you checked the pitch of the blades as per the posts above?

I'm not a pro just learning to hover.

I'm using pitch curv of 75-75-85-90-100

                        Seems very stable

That pitch curve is a bit off.....

Pitch curves and throttle curves are a matter of personal taste but that one is almost fixed pitch.

                          Something like (for normal mode)
                          Throttle curve: 0, 50,80,90,100
                          Pitch curve: 30, 40,50,80,100

Those can be tweaked to taste. You want 50 at mid stick for sure, a bit of negative (below 50) below mid, and full range above.
With throttle curves you want a high head speed above mid stick (where pitch goes positive and you get lift)

                            Although when I dethrottle
It slams to the ground. Mine are nice and soft

Yeah, you need to be careful dropping the stick.
You can increase the 2nd throttle point a bit, say 60. Try that, it will slow the drop. Can also increase pitch points 1 and 2 to say 35 and 43, again will slow the drop.
Either way, you want to keep head speed as high as possible and only use pitch to ascend/descend. When you're outside and there's a breeze, having your original pitch curve may cause the heli to fly off to the next county....
