I am sure I have seen a gizmo to take the individual servo outputs from an Rx and allow you to plug the trainer port lead into it thus providing a wireless link using the Rx to the sim dongle. As the servo signals are standard across most main manufacturers this wouldnt be to hard to do... if I get a spare minute I will have a thing about how to do it.

Update:
We have cracked the resolution issue and now have a viable for testing prototype.! should be tested this weekend and opinions saught. If our locals say yes... then i will do a PCB for it and make 25 or so see how they go... It will be tested on FF9 12FG DSX9 and DX6i. The spektrum format will work with all versions i believe there is specific issue with the 12FG so it needs seperate testing but the design takes care of that.
This is an infra red module so its line of sight only you need the eye that attaches to the phoenix dongle by your screen... or pointing at the back of your transmitter it reasonably sensitive and will work at 5-6M (i run out of space by then and any farther away cant see my monitor)
I have an adaptor for a spektrum rx in the pipeline and that will remove the line of sight issue so you could in theroy use it at 100 yards providing you have a screen big enough.... Watch this space for more detail's you will need an AR6000 or AR7000 to run with it as it recombines all the servo signals to a composite PPM that is required by Phoenix.
For those who want a tech description it recombines the chanels into composite PPM from the servo signals to give a single Phoenix compatable output. You need to scavinge the power from the Dongle (its already there from the USB) and it works with a DX6i so (i am curently assuming) it will work with DX7 / JR in fact all DSM equipment. I am working on Futaba at the moment .... Bear with me.... it wont be long...
Count me in for a board if you are going to produce them. I'm happy if its pcb only if you can list the other item codes required from RS etc.
Cheers Rob.
Give me a few days to do the packaging and we will have a product... It will plug in between the dongle and USB and the RX will plug into it.... It will be plug and play.... I have a very few at the moment and need to do some late prototypes.... Then i will manufacture it.... Will take a few weeks to resolve though should be just in time for the winter weather.
