Dx7. In/out?

On the pitch and throttle curve screens, down the bottom on the left are the words IN and OUT with numbers adjacent to each. The numbers change in relation to the stick position. But what do they actually mean please and what influences the difference (or gap) between the two figures.

In is the stick position and Out is what gets transmitted, which may be different due to curve, expo and rate settings.
