rich or lean mixture

hi all.
how can you tell whats what i.e lean or rich?
the reason i ask is my new yet to be run in 30 v2 hovers at just about half stick but i have trouble to get it to get any higher i have a pitch of -2 to + 10 but when i power on full stick the engine stays the same and it struggles to get any hight could this be due to incorrect mixture?

My engine took a about 6 tanks to fully loosen up in my R30 and was told at the time not to fiddle too much until fully loosend up

Does the engine sound like it is choking up and losing power when you add more throttle?
Is it getting hot on the backplate - so that you can't hold your finger on it for 3 or more seconds without it hurting?
Are you certain you have +10° pitch at full stick?
What is your throttle curve set to between midstick and full stick?
Does the carb full open and close at full up and down stick positions?

Just a few things to check

yes it does sound like its choking up
