From what you're describing mate it sounds like a centre of gravity issue more than anything else, high speed rolls will show more of a problem with the fuselage attitude changes if this is out.
Also it could also be that your thumb is adding in an elevator command on full aileron stick deflection. Hence why slow rolls are perceived not to be effected.
I know the likes of Duncan Osbourn, Stuart Mott and many others do not perform this modification to their swashplate and do not have any ill effects in flight.
If you make it out today try some stationary piro's, without touching the cyclic stick and observe if the model moves offline while yawing. If it does then this indicates a centre of gravity problem in most case's, however today with the wind gusting you might struggle to differentiate between wind influencing the models line or the setup.
