Which bit of the carb should the header tank be level with?

So, just to add to my confusion.

Im not sure which bit of the header, or which bit of the carb im supposed to be matching up.

The middle of the header with the middle of the carb barrel?

The header outlet with the carb inlet (its a 55 so the inlet is slightly lower than the barrel)

I line up the centre of the outlet from the header with the carb inlet, I don't think it makes so much difference though jimmy. The delivery will be the same whether upright or inverted and the head will be kept more constant.

I use the outlet of the main tank and line the outlet of the header with that

I have never worried about aligning the header tank with anything, I have always just mounted them wherever it's most convenient and they seem to work. I don't think gravity plays much of a part in the fuel delivery big picture if you're doing loops and rolls and flying inverted etc. One second maybe it's working with you then the next it's not and you have all sorts of other forces going on, so ultimately it's down to exhaust pressure (or pump or crankcase depending on the engine).

I just fit the header and fly...never line it up with the engine at all...mine all work fine.....
