This might be a stupid question but what is the difference between life and lipo?

Robustness and charge rate I think...

Life has lower voltage per cell,3.3 for a start so you can run most servos direct on a 2s,unregulated.Lot less chance of fire so safe to charge on the model and leave on the model

Aaaaalso, much more consistent voltage under load and discharge state with LiFe...

Good for consistency, bad for knowing how much go go juice is left.

And now tell me you can tell the difference in flight between 2 otherwise identical setups!

I way prefer life as an RX pack; simple setup, no regulator to go wrong, no switches to fail, no extra connections. Just plug in to the RX and go fly

LiFe batteries are slightly heavier than Lipos for the same energy. They have lower volts per cell and are safer than Lipos. They last a lot longer than lipos. All sensible heli pilots use them. (Nor very popular at the moment)
