The movement of the servo when powered down is down to the gearbox design. I don't think digital/analogue comes in to it without power. I'm not sure why most servos turn ok with power off and some don't. Perhaps play in the gearbox bearings or wear in the cogs. Something that possibly needs checking on nitros to make sure that the fail safe still works. It's true of all safety features. They are only useful if there is a high probability that they work, which usually means frequent tests.

...Also I dont know if its been covered but the fuel cut-off is a simple but very impractical idea. Have you tried pulling the fuel line to your engine while its running at idle? It goes crazy for a couple of seconds as it leans out.
The advantage of the spring is it kills the engine dead, instsantly!
Also this talk of the 'extra stress' on the servo: Have you seen how much load a cyclic servo is under during 3d manouvers?
