If I crashed a bit more often, I might more serious about investing in a way of producing better canopies myself - although I can imagine all too well how badly they would turn out if I tried to apply paint by hand. My other half has a vinyl cutter (for doing T-shirt artwork), if it was a once-a-month occurrence I'd probably try to find out if there's some way of turning out a batch job of flashy vinyl stuff.

Vinyl on heli canopies, must have been done..?!

To be honest i wouldn't bother with a lacquer coat, plastikote is a fairly flexible paint and using lacquer will increase the chance of cracking it when you are constantly removing and refitting the canopy.(just thinking along the lines of keeping the costs down)
The darker hi viz colours do not require many coats although the yellow one does.

I had that idea a while ago I keep meaning to get 2 blank canopies and give them to my 5 and 7 year old daughters- they would love blinging daddies heli, so go for it

You're right, she'd really enjoy doing that. Probably work out cheaper than Plasti-Kote too. What with the slightly technical masking off bits and bobs, it's even educational.

If it peels off - great! Get to do it again

I'll go hunt down the Tamiya dayglo paints that someone else mentioned.
