Your pitch range sounds good for starters. Now check that both blades are about the same then spin her up gently indoors and watch to see if both blades track properly (ie both blades track through at the same level. If one is a bit high (I presume there is a mark or coloured tape on one blade) then remove the short ball link that connects that blade to the swash/mixer and rotate it one full turn and reconenct. Try again and adjust as necessary. Once that's sorted, check all controls are working in the right direction and then give it a try... but ....
Keep the training undercarriage on and spool her up in calm conditions or indoors. Use a slippery surface such as a concrete or wooden floor so that you can tell if the tail is behaving properly before you get airborne. Bring the power in slowly and be ready to catch a bit of drift to the left by using a bit of right cyclic. Any problems, drop her down gently and try to work out what's going on.
If the tail drifts a lot or you need a lot of stick to correct it, increase the gain a bit on the gyro pot with a small screwdriver. If it wags, back it of a tiny bit and try again.
