Different Tx will show this differently.. but with the dx7 on the gear switch.. ie the negative figure will be rate, and the positive figure will be heading hold(or the other way round depending if the channel has been reversed..)
A 75 figure will no doubt wag. Just put it on 40 odd and go from there. When the heli is on the ground in HH I'm guessing that your tail blades have pulled over to one side probably completely. That is why when the heli is about to take off it wants to swing one way. just give the tail a bit of opposite rudder to counteract it, and once it has left the ground it will hold its heading.
