As a beginner, any sim will do, it'll generally take a couple of years before you get to the point you can really tell the difference between them.
AccuRC is very good, it's my current favourite, but has a very steep learning curve and requires a powerful PC. It's great as your skills improve, and you can learn a lot about helicopter mechanics by playing about with various options on it, but it's not a sim I'd recommend for a beginner. It also doesn't have any of the training options the others do, and has a smaller model selection.
Phoenix is very easy to use, it doesn't fly as well as some of the others, but it's absolutely fine for learning on.
RealFlight and neXt seem to be two of the best at the moment. RealFlight has had a great reputation for a long while, it's got an active user community and a ton of user models on top of all the ones it has itself. NeXt is newer but has some momentum and is getting some good reports, one of its biggest advantages is that it can run natively on Mac or Linux as well as windows, and you can also download it straight from their website, it'll run for 2 mins in a trial mode.
I've recently got into helis and found realflight fantastic, very simple to setup with even a moderately powerful computer. It has some nice training programs aswell including one where the heli is tethered to the ground which I find very useful for learning inverted and backwards flying. I previously used aerofly but it seems more orientated towards planes than helis. I got the setup with the included Tx. and can't fault it. I find the planes don't fly particularly "real" but I'm sure with some set-up they will do well.
It should be mentioned that I am pretty much a novice when it comes to helis, but when comparing it to the real models I have flown it is pretty close.

It's a great sim - they have made a lot of improvements after a year. I'd just go for it, they have preset setups which will get you flying in about 5 minutes. Physics in AccuRC are far superior to both Phoenix and RF7 and it pays off when switching to real model. You won't find many bells and whistles in Accu tho (no multiplayer, no hover games etc.).
