    Soldering irons

Make sure the tip is suitably tinned! A bit of flux always helps if it's being a little tricky. Add that to the connector.

For ec5 i use a mini torch, works much better and no mess on the bullet as with an iron it really needs to be tinned to get the heat transfer.

Hope this helps, also gave a look on YouTube there's loads of vids.

+1 on the torch, but really make sure you thoroughly flux and then really tin the bared cable before you put it into the EC5.
I also tend to melt some solder into the EC5 before I then reheat and push the wire in.
Pop a correct size shallow hole into a piece of wood to hold the EC5 nice and upright, frees off one hand as well.
Finally check you don't get any solder in the small groove on some styles of EC5 otherwise they won't lock into the plastic body (Carefully chase out any excess solder with a junior hacksaw blade).

Cleanliness and preparation is the key, combined with the right temperatures. It should all happen pretty quickly when you get it right.

Questions on soldering and soldering irons, particularly regarding bullet connectors, come up so regularly perhaps one of our erstwhile sponsored pilots would care to do a soldering 101 thread in the Sponsors Workshop? That way future questions can be referred straight to that thread initially then further questions can be answered in threads like this.

And before anyone gets on their high horse I'm not taking a swipe at the OP. This is a gentle nudge at the sponsors who were given their own section to provide information on exactly this kind of thing

Can't you take the tip of and just use it as a mini blow torch?
