Depends on the type of flying and the engine really. In our shuttles we use up to 15% nitro fuel, Model Technics Bekra 10% is my current fuel and works well.
Also might depend on what your local model shop keeps in stock as you'll probably buy from there unless you want to pay for postage as well and not everywhere posts fuel.
any good heli fuel will be ok
5% upwards
20% or 30% is a little ott to learn to fly with
the os/irvine/mds 30 size engines normaly fitted to the shuttle will run well on low nitro fuel
