When fitting the pinion on my 600e, should any of the pinion contact the pinion support bearing underneath it, or should it be the motor shaft only that slides inside it?...

I would also leave a small gap. I don't have the current 600E but do have a 700 which has a similar arrangement.Everyone is entitled to my opinion!
